Press the following button combinations at the mode selection screen:
If the code is accepted, you shold hear a sound.

Unlock all tracks:
Press Up, Left, Right, L, Z, R.

Unlock all bikes:
Press Up, Left, Right, L, Z, R, Up, Down, Down, Z, Down.
